Banana Bread

If you've got ripe bananas sitting on your counter, this is your sign.
One bowl, simple ingredients, about an hour, and you've got a loaf that'll sort your breakfasts and snacks for the week.
It's the kind of bake that makes the whole house smell incredible and feels like time well spent.
The Recipe
Makes: 1 loaf | Prep: 10 mins | Bake: 55–60 mins
You'll need:
2 sticks butter, softened
¾ cup brown sugar
3 ripe bananas
2 eggs
1 tbsp vanilla extract
2 cups flour
1 tbsp baking powder
½ tsp salt
½ cup Greek yogurt
Method:
Preheat your oven to 175°C (350°F) and grease your loaf tin or line it with parchment paper.
Cream together the butter and brown sugar until light and fluffy.
Mix in the eggs, then mash in your bananas and add the vanilla.
Add the flour, baking powder, and salt. Stir until just combined.
Fold in the Greek yogurt until just incorporated.
Pour into your loaf tin and bake for 55–60 minutes, until a skewer comes out clean.
Let it cool for at least 20 minutes before slicing. I know. It's hard, but worth it!
