Fast, Nourishing Meals Don't Require Starting From Scratch

A nourishing meal doesn't mean it has to be made from scratch. Some of the best meals lean on the grocery store to help be your prep chef. A quality frozen item, a bag of pre-shredded carrots, a flavorful jarred sauce base can help you pull together a quick, satisfying meal faster than ordering from Uber Eats. A veggie and wonton bowl is one I make often. It uses a full package of Trader Joe's chicken cilantro wontons, plus a quick veggie sauté and a sauce you whisk together in under a minute. From fridge to bowl, it's ready in about 30 minutes.

A note on the shortcuts: I use Trader Joe's shredded carrots, which is an easy swap that saves a few minutes instead of shredding your own. You could also grab pre-diced onion to save an additional few minutes. Neither swap changes the outcome of the dish, they just buy you back time on a weeknight when you'd rather be doing something other than standing at a cutting board.

Sautéed Veggies + Trader Joe's Chicken Cilantro Wonton Bowl

Ingredients

Serves 4

For Veggies:

  • 1 tbsp sesame or olive oil

  • 1 medium onion, diced

  • 2 garlic cloves, minced

  • 2 medium zucchini, diced

  • 1.5 cup pre-packaged shredded carrots or 1/2 of a 10oz bag

  • 2 handfuls of fresh spinach

  • Splash of yuzu ponzu

For Wontons:

  • 1 tbsp sesame oil

  • 1 package Trader Joe's chicken cilantro wontons

  • 1 1/2 cups water

For Sauce:

  • 2 tbsp soy sauce

  • 3 tbsp yuzu ponzu

  • 1 tsp sesame oil

  • 1 tbsp rice wine vinegar

  • Sriracha, to taste

Garnish - don't skip this, it adds so much extra flavor!

  • 2 tbsp fresh cilantro, chopped

  • 2 tbsp fresh Thai basil, chopped

Instructions

  1. Heat 1 tbsp sesame or olive oil in a large pan over medium heat. Add the diced onion and garlic and cook until softened, about 3–4 minutes.

  2. Add the diced zucchini and shredded carrots. Sauté until the zucchini is tender and lightly golden, about 5–6 minutes. Add splash of ponzu to help sauté. Add spinach and sauté until wilted and mixed with other veggies. Remove from heat and set aside.

  3. Meanwhile, in a separate pan, heat 1 tbsp sesame oil over medium heat. Add the Trader Joe's chicken cilantro wontons and 1.5 cups water. Cover and cook according to package instructions, until the water is absorbed and the wontons are cooked through and browned a little.

  4. While the wontons cook, whisk together the soy sauce, yuzu ponzu, sesame oil, rice wine vinegar, and sriracha in a small bowl to make the sauce.

  5. Add wontons to veggie pan and mix together. Divide between serving bowls. Drizzle with sauce and top with chopped cilantro and Thai basil. Serve immediately and enjoy!
