Happy Leap Day! Bake some cookies to celebrate! It's almost Spring after all!
Ingredients:
2 sticks unsalted butter, softened
1 cup white sugar
1/2 cup packed brown sugar
2 eggs
2 tsp vanilla extract
1 tsp baking soda
1/2 tsp baking powder
1/2 tsp salt
3 cups all-purpose flour
1 cup semi-sweet chocolate chips
1 cup salted caramel chips (I got mine at Trader Joes's)
1 cup chopped pecans
Directions:
Beat butter and sugars together. Then add eggs, one at a time, then vanilla.
Mix in baking soda and flour.
Next, mix in both chips and pecans.
Drop dough, 1 tbsp at a time on a parchment paper lined cookie sheet. Space to make room for spreading while baking.
Bake in a preheated oven @ 350F until just done, about 10 minutes - check to be sure.
If you don't want to bake all of the cookies at once, you can drop the dough on a cookie sheet and freeze for 1 hour. Transfer to a freezer container or zip lock and store in the freezer until ready to bake. You can cook from frozen, just add a couple of minutes to cook time, but check to make sure not over cooking.
